Lavender

Lavender, the famous flower of Provence, colors the region every July. This area provides the world with about 80% of its needs. Harvesting continues until September and is mostly mechanized although in some areas it is still collected in cloth sacks slung over the back.

Lavender everywhere.....infused in sea salt for cooking, soap, dried and packed in Provencal fabrics.

To see the beautiful fields in full bloom, you need to come in July when it's quite warm. This is the best time of year weather-wise, so I'll just imagine........
